Rocket, Orange, Pear, and Walnut Salad

Peppery rocket (rucola), sweet juicy oranges, crisp pears, and crunchy walnuts make a delicious combination.

Ingredients

  • 60 g rocket (aka rucola) and mixed salad leaves
  • 1/2 orange
  • 1/2 Beurre Bosc pear
  • 15 g walnuts
  • 1/2 lime (about 20ml juice)
  • 10 ml maple syrup
  • 10 ml olive oil
  • a pinch of salt and pepper

Instructions

  • Start by giving your rocket and salad leaves a good wash. After drying, pop them into a large bowl.

  • Cut the pear into quarters and remove the core of the centre. Slice them thinly, about 2-3mm thick.

  • Cut the orange into quarters and carefully remove the fruit from the skin. Slice the fruit into thin half-moons.
    Tip: Removing the white pith from the centre of the orange enhances both the texture and taste.

  • Toss the sliced pears and oranges into the bowl with the rocket and mixed leaves.

  • Take a handful of walnuts, crush roughly with your fingers, and add them to the mix.

  • For the dressing, squeeze the juice from the lime into a small bowl, then add the maple syrup, olive oil, salt, and pepper. Whisk until blended well.

  • Drizzle the dressing over the salad, and toss gently to coat evenly. And there you have it – a salad fit for a feast!
